A Fisherman’s Snack

We’re heading to the lake bright and early tomorrow to celebrate the Fourth of July weekend, and along with packing our swimming suits, giant Jenga game and fireworks, we’re all about the snacks.

While Eric got his new fishing pole ready, I made a super easy (and addictive) snack mix for the boat – from one of my many Pinterest pins. Check out the recipe below:

A Fisherman’s Snack Mix
Ingredients:
2 cups fish-shaped pretzel crackers
2 cups Cheez-Its
9 cups rice or corn Chex cereal
1 packet ranch dressing seasoning mix
1/2 cup grated Parmesan cheese
4 tbsp butter or margarine

10 minutes prep time, 25 minutes total time, 24 servings

Directions:

  1. In an extra-large (make sure it’s huge) microwavable bowl, combine pretzels crackers, Cheez-Its and  Chex.
  2. Microwave butter until melted. Pour butter over cereal and crackers until evenly coated. Stir in dressing seasoning and cheese until combined.
  3. Microwave mixture for 3 minutes – stirring mixture each minute. Spread on foil to cool for 15 minutes. Store in airtight container.

Have a great Fourth of July weekend, and stay tuned for a recap from our trip!
